The Laslett in Notting Hill and the wider Living Rooms collection have appointed five leaders across hotel operations, food and drink, the kitchen, marketing and commercial development. The boutique hotel has made its five senior appointments as it enters its 11th year, according to Boutique Hotel News. The appointments include three leaders at the property and two within the wider collection’s sales and marketing team. The Laslett is a boutique hotel in Notting Hill and part of Living Rooms.

What leadership changes has The Laslett made?

At The Laslett, three appointments cover the departments responsible for day-to-day operations and the hotel’s food offer. The full line-up is:

  • Scott Johnson — operations manager, The Laslett.
  • Ana Todirica — food and beverage manager, The Laslett.
  • Phoebe Ulkoja — head chef, The Laslett.
  • Jessica Murray — head of marketing, Living Rooms.
  • Hugo Barbier — senior sales manager, Living Rooms.

The appointments divide responsibility between three hotel-based roles and two positions supporting sales and marketing across the wider Living Rooms collection. The announcement therefore covers leadership at the Notting Hill property as well as the collection’s sales and marketing functions.

Who is responsible for food, drink and the kitchen?

Scott Johnson becomes operations manager at The Laslett after more than a decade of leadership experience in boutique hotels and dining venues. Johnson’s background includes Firmdale’s Charlotte Street Hotel, The Harwood Arms, The Hound Chiswick and Young & Co’s.

Ana Todirica joins The Laslett as food and beverage manager with over 10 years of experience in cocktail bars, wine bars and dining venues. Todirica will lead the hotel’s beverage programme and oversee service standards.

Phoebe Ulkoja takes over the kitchen at The Laslett as head chef. Ulkoja is known for her creative approach to classic dining and will develop seasonal, ingredient-led menus alongside event catering that highlights local produce. Her responsibilities also include bespoke event catering for the hotel.

Together, Johnson, Todirica and Ulkoja cover general operations, the beverage programme, service standards, menu development and event catering at the Notting Hill property. The announcement describes Ulkoja’s food remit as combining seasonal menus with a focus on local produce.

What appointments has Living Rooms made in sales and marketing?

Jessica Murray becomes head of marketing at Living Rooms after consulting with the collection and working with Luxury Family Hotels and Ralph Trustees. Murray’s appointment places marketing leadership within the wider group rather than solely at The Laslett.

Hugo Barbier becomes senior sales manager at Living Rooms following work with global hospitality brands including Dorchester Collection and Accor. Barbier will oversee commercial development and strategic account management across the collection, with a stated focus on market presence and long-term client partnerships.

Living Rooms has announced both roles as key appointments within its sales and marketing leadership team. Together with the three property-level appointments, they bring the total to five senior appointments.

What experience is behind the new team?

Scott Johnson, Ana Todirica and Phoebe Ulkoja bring experience from boutique hotels, dining venues, cocktail bars, wine bars and classic dining, while Jessica Murray and Hugo Barbier add marketing, consulting and global hospitality sales backgrounds to Living Rooms. Johnson has more than a decade of leadership experience, while Todirica has over 10 years across cocktail bars, wine bars and dining venues.

"I’m delighted to have welcomed a new leadership team," — Tracy Lowy, owner of Living Rooms

Tracy Lowy said the collective experience, fresh perspectives and shared commitment to hospitality would shape the next chapter for Living Rooms. Her full statement said the team would be instrumental in shaping that chapter and described its shared commitment to exceptional hospitality.

In proportion, the announcement covers five senior appointments across The Laslett and the Living Rooms collection as the hotel enters its 11th year of operation (Hotel Owner).
